Preparation of Blackened Snapper

    Make the Spice Rub

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well.

    Season the Snapper

    Rub the spice mixture generously over both sides of the snapper fillets.

    Cook the Snapper

    Heat olive oil in a skillet over medium-high heat. Once hot, add the snapper and cook for about 3-4 minutes on each side until blackened and cooked through.

    Mix the Ingredients

    In a bowl, combine chopped parsley, basil, capers, minced garlic, lemon juice, and olive oil. Mix well and season with salt and black pepper to taste.

    Cook the Rice

    In a saucepan, bring water to a boil. Add rice and salt, cover, and reduce heat to low. Cook for 15-20 minutes or until rice is tender and water is absorbed. Fluff with a fork.

    In a skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender.
