Chicken Preparation

Prepare the Chicken
Cut the chicken breasts into bite-sized pieces and season with salt and pepper.

Make the Tempura Batter
In a bowl, mix the all-purpose flour, cornstarch, and salt. In a separate bowl, whisk the eggs and add the cold sparkling water. Combine both mixtures to form a batter.

Fry the Chicken
Heat the vegetable oil in a deep pan. Dip the chicken pieces into the tempura batter, then carefully place them in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
Wasabi Aioli Preparation

Make the Aioli
In a bowl, combine mayonnaise, wasabi paste, lemon juice, minced garlic, and salt. Mix until smooth and set aside.

In a small bowl, combine finely chopped red chilies, grated ginger, soy sauce, sesame oil, and honey. Mix well to combine.
