Roasted Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Chicken

    Pat the whole chicken dry with paper towels. Rub olive oil all over the chicken, then season with salt and black pepper. Make sure to season inside the cavity as well.

    Add Aromatics

    Stuff the cavity of the chicken with fresh thyme, crushed garlic cloves, and lemon halves.

    Roast the Chicken

    Place the chicken breast-side up on a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through.

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for 15 minutes before carving.

Pommes Purée

    Boil the Potatoes

    Peel and cut the russet potatoes into quarters. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

    Cook Until Tender

    Boil the potatoes until they are fork-tender, about 15-20 minutes. Drain and let them sit for a few minutes to dry out.

    Mash the Potatoes

    Using a ricer or potato masher, mash the potatoes until smooth and creamy.

    Add Butter and Cream

    Incorporate the unsalted butter and heavy cream into the mashed potatoes. Stir until fully combined and creamy. Season with salt to taste.

Country Ham

    Prepare the Ham

    In a skillet over medium heat, lightly brown the slices of country ham for about 2-3 minutes on each side, until heated through and slightly crispy.
