    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into evenly sized chunks. Place them into a large pot and cover with cold water. Add 1 teaspoon of salt to the pot.

    Boil the Potatoes

    Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Cook the Onions

    While the potatoes are cooking, slice the yellow onions thinly. In a large skillet, melt 1/2 cup of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.

    Once the onions are caramelized, add the minced garlic and fresh thyme. Cook for an additional 2-3 minutes until fragrant.

    Once the potatoes are cooked, drain them and return them to the pot. Add the remaining 1/2 cup of butter, heavy cream, caramelized onions, and season with salt and black pepper to taste.
