    Prepare the Asparagus

    Start by trimming the woody ends off the asparagus spears. Bring a pot of salted water to a boil and add the asparagus. Blanch for about 2-3 minutes until bright green and tender-crisp. Remove and plunge into an ice bath to stop cooking. Drain and set aside.

    Season the Filet Mignon

    Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.

    Cook the Filet Mignon

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon pieces. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. During the last minute of cooking, add butter to the skillet and baste the filets with the melted butter. Remove from heat and let rest for 5 minutes.

    In a small saucepan, gently heat the lump crab meat over low heat. Be careful not to overcook it, as it should be warmed through but still tender.

    On a serving plate, place a filet mignon. Top it with a generous portion of warmed crab meat, followed by a drizzle of hollandaise sauce. Arrange the blanched asparagus alongside the filet for a complete presentation.
