Cooking Instructions

  1. 1

    Prep the Ingredients

Start by preparing all your ingredients. Rinse the cod fillets under cold water and pat them dry with paper towels. Mince the garlic cloves and chop the parsley finely. Slice the cherry tomatoes in half and cut the zucchini into thin rounds.

  2. 2

    Marinate the Cod

In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Place the cod fillets in the bowl and coat them well with the marinade. Let them marinate for at least 15 minutes.

  3. 3

    Cook the Zucchini

Heat a non-stick skillet over medium heat. Add a splash of olive oil, then add the sliced zucchini. Sauté for about 5-7 minutes until they are tender and slightly golden. Remove from the skillet and set aside.

  4. 4

    Cook the Cod

In the same skillet, add the marinated cod fillets. Cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. If desired, add the halved cherry tomatoes to the skillet during the last minute of cooking.

  5. 5

    Serve

To serve, place the sautéed zucchini on a plate, top with the cooked cod, and garnish with fresh chopped parsley. Enjoy your delicious BLISH POINT MA!
