Crêpes

    Prepare the Crêpe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, melted butter, and salt until smooth. Let the batter rest for 30 minutes.

    Cook the Crêpes

    Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet and swirl to coat the bottom. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.

Cheese Filling

    Prepare the Cheese Filling

    In a bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until well combined.

Sweet Cream

    Make the Sweet Cream

    In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Set aside.

Raspberry Coulis

    Prepare the Raspberry Coulis

    In a small saucepan, combine raspberries, sugar, and water. Cook over medium heat until the raspberries break down and the mixture thickens slightly, about 5-7 minutes. Strain to remove seeds, if desired.

Assembly

    Assemble the Nalesniki

    Spread the cheese filling evenly on each crêpe, roll them up, and place them on a serving plate. Serve with sweet cream and drizzle the raspberry coulis on top.
