Preparation of Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into halves. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Sauté the Potatoes

    Heat olive oil in a pan over medium heat. Add the boiled potatoes and sauté until golden brown. Season with salt to taste.

Preparation of Sauce Tartare

    Mix the Sauce

    In a bowl, combine mayonnaise, chopped pickles, capers, and lemon juice. Mix well and refrigerate until ready to serve.

Cooking the Sole

    Prepare the Sole

    Season the filet de sole with salt and pepper on both sides.

    Coat the Sole (if pané)

    If you are panéing, dredge each filet in flour, dip in beaten eggs, and coat with breadcrumbs.

    Sauté the Sole

    In a large skillet, melt butter over medium heat. Add sliced almonds and cook for 1 minute. Add the sole filets and cook for 3-4 minutes on each side until golden and cooked through.

Preparation of Salad

    Assemble the Salad

    In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, and season with salt. Toss to combine.

Serving

    Plate the Dish

    Serve the sautéed sole with sautéed potatoes, sauce tartare on the side, and a fresh salad.
