Prepare the Crust

    Make the Dough

    In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    On a floured surface, roll out the dough to fit your pie dish. Place the rolled dough in the dish and trim excess. Prick the bottom with a fork and refrigerate while preparing the filling.

Prepare the Filling

    Mix the Fruit

    In a large bowl, combine the sliced apples or peaches with sugar, cinnamon, and lemon juice. Toss until the fruit is well coated.

Assemble and Bake

    Fill and Bake

    Preheat the oven to 375°F (190°C). Pour the fruit mixture into the prepared crust, spreading evenly. Bake for 45-50 minutes or until the fruit is bubbling and the crust is golden brown.

    Cool and Serve

    Allow the croustade to cool for at least 15 minutes before serving. Meanwhile, whip the heavy cream with powdered sugar and vanilla until soft peaks form. Serve the croustade warm with a dollop of sweet cream.
