Grilled steak, and cheddar & mozzarella cheese stuffed inside a grilled flour tortilla. Served with choice of potato and soup or salad.

Steak Preparation

    Marinate the Steak

    In a bowl, combine the olive oil, garlic powder, onion powder, cumin, salt, and black pepper. Add the flank steak and coat it well with the marinade. Let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Grill the marinated flank steak for about 6-7 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

    Slice the Steak

    Slice the grilled steak against the grain into thin strips.

Quesadilla Assembly

    Prepare the Quesadilla

    Heat a large skillet over medium heat. Take one flour tortilla and sprinkle half of the cheddar and mozzarella cheese over one half of the tortilla. Layer the sliced steak on top of the cheese, then sprinkle the remaining cheese over the steak. Fold the tortilla in half.

    Cook the Quesadilla

    Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

    Cook the Potatoes

    In a separate pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

    Sauté the Potatoes

    In a skillet, melt the butter over medium heat. Add the cooked potatoes, season with salt and black pepper to taste, and sauté until golden and crispy, about 5-7 minutes.

Salad or Soup Preparation

    Prepare Salad

    In a bowl, combine the chopped lettuce, diced tomatoes, and sliced cucumber. Toss with your choice of dressing. Serve alongside the quesadilla.
