Preparing the Shrimp & Vegetables

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, and sauté for about 5-7 minutes, or until they are tender and slightly caramelized. Remove from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, cumin, chili powder, paprika, salt, and black pepper. Cook for about 3-4 minutes, or until the shrimp turn pink and are cooked through.

    Combine

    Return the sautéed onions and peppers to the skillet with the shrimp. Toss everything together and heat through for another 2 minutes.

Preparing the Sides

    Heat the Refried Beans

    In a small saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.

    Prepare the Rice

    Ensure the cooked rice is ready. You can add a pinch of salt or lime juice for extra flavor if desired.

    Warm the Tortillas

    Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 5-10 minutes.

Serving

    Plate the Dish

    On each plate, serve a portion of the sautéed shrimp with vegetables alongside the rice and refried beans. Add lime wedges on the side and serve with your choice of soup or salad.
