Cooking Pasta

Boil Water
In a large pot, bring 4 liters of water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

Cook Spaghetti
Add 400g of spaghetti to the boiling water. Cook according to package instructions, typically around 8-10 minutes, stirring occasionally.

Drain Pasta
Once the spaghetti is al dente, drain it in a colander and set aside, reserving a cup of pasta water for later use.
Making Sauce

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic
Add 4 minced garlic cloves to the skillet and sauté for about 1 minute, until fragrant but not browned.

Add Tomatoes and Spices
Pour in 800g of crushed canned tomatoes. Stir in 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.

Simmer Sauce
Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally until slightly thickened.
Combining and Serving

Combine Pasta and Sauce
Add the drained spaghetti to the sauce, tossing gently to combine. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

Serve the spaghetti on plates and sprinkle with 50g of grated Parmesan cheese. Garnish with fresh basil leaves.
