    Prepare the Pie Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together but is not sticky. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    On a floured surface, roll out the dough to fit your pie dish. Transfer it to the dish and trim any excess dough hanging over the edges.

Fruit Filling

    Prepare the Fruit Filling

    In a large mixing bowl, stir together the fresh fruit, granulated sugar, cornstarch, cinnamon (if using), and lemon juice. Allow the mixture to sit for about 10 minutes to let the juices release.

    Fill the Pie Crust

    Pour the fruit mixture into the prepared pie crust, spreading it evenly.

Cream Filling

    Prepare the Gelatin

    In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes to bloom.

    Whip the Cream

    In a large bowl, whip the heavy cream and powdered sugar until soft peaks form. Add the vanilla extract and bloomed gelatin, mixing until fully combined.

    Fill the Pie

    Pour the cream filling over the fruit filling in the pie crust, smoothing the top with a spatula. Refrigerate for at least 2 hours to set.
