Prepare the Fish

Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk until well combined. Gradually add in the beer or sparkling water, stirring until you achieve a smooth batter.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should bubble and float.

Fry the Fish
Dip each fish fillet into the batter, allowing excess batter to drip off. Carefully place the battered fillets into the hot oil. Fry in batches, 3-4 fillets at a time, for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Buns
While the fish is frying, slice the burger buns in half and toast them lightly if desired.

On the bottom half of each bun, place a lettuce leaf, followed by a fried fish fillet, a slice of tomato, a few pickles, and a generous dollop of tartar sauce.
