Marinate the Chicken
In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best flavor.

Prepare the Dredging Station
In a separate bowl, place the flour. Remove the chicken from the marinade, allowing excess liquid to drip off, then dredge each piece in the flour, coating evenly. Shake off any excess flour.

Fry the Chicken
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the chicken in batches, cooking for about 12-15 minutes per side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Transfer to a wire rack to drain excess oil.

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine and Cook Waffles
Pour the wet ingredients into the dry ingredients and stir until just combined. Preheat your waffle iron according to manufacturer's instructions. Pour the appropriate amount of batter onto the preheated waffle iron and cook until golden brown, usually about 5-7 minutes. Repeat until all batter is used.

Plate the Dish
On a plate, place a waffle and top it with a piece of fried chicken. Drizzle with maple syrup and add a pat of butter if desired. Serve immediately.
