Method
Preparation
- 1
Prepare the Meat
Pound the beef round steak and chicken breast to about 1/2 inch thickness using a meat mallet. This helps tenderize the meat and ensures even cooking.
- 2
Marinate
In a bowl, combine buttermilk, egg, salt, and pepper. Add the pounded meat and let it marinate for at least 30 minutes in the refrigerator.
Breading
- 3
Prepare the Breading
In a shallow dish, mix the flour, cornstarch, garlic powder, paprika, salt, and black pepper. This will be used for breading the marinated meat.
Cooking
- 4
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of breading into it; if it sizzles, it is ready.
- 5
Fry the Meat
Remove the meat from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, pressing gently to adhere. Fry the coated meat in the hot oil for about 4-5 minutes on each side or until golden brown. Cook in batches if necessary to avoid overcrowding the pan.
Gravy
- 6
Make the Gravy (Optional)
In the same skillet, after removing the fried meat, reduce heat to medium. Melt butter, then whisk in flour to create a roux. Cook for 1-2 minutes until lightly browned. Gradually add milk, whisking continuously to avoid lumps. Season with salt and pepper. Simmer until thickened.
