    Prepare the crust

    Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes. Remove from oven and let it cool while preparing the filling.

    Make the filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the remaining 1/4 cup of sugar, sour cream, and vanilla extract, mixing until well combined.

    Add eggs and cornstarch

    Add the eggs one at a time, mixing on low speed after each addition. Finally, add the cornstarch and mix until just combined.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.

    Bake the cheesecake

    Bake in the oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

    Chill and serve

    Refrigerate the cheesecake for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan, slice, and serve.
