Method

Cooking the Rice

  1. 1

    Prepare the Rice

In a saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

Cooking the Salmon

  1. 2

    Sear the Salmon

Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes until cooked through. Remove from the skillet and set aside.

Making the Sauce

  1. 3

    Prepare the Lemon-Caper Sauce

In the same skillet, reduce heat to medium and add butter. Once melted, stir in lemon juice and capers. Cook for 1-2 minutes until heated through. Remove from heat and stir in fresh parsley.

Serving

  1. 4

    Plate the Dish

Serve the seared salmon over a bed of rice and drizzle with the lemon-caper sauce. Enjoy!
