Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
Grilling the Chicken
Prepare the Chicken
While the pasta is cooking, season the chicken breasts with olive oil, salt, black pepper, and garlic powder.
Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat, let rest for a few minutes, then slice into strips.
Making the Sauce
Prepare the Sauce
In a medium saucepan over medium heat, add a tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant. Add the chopped sun-dried tomatoes and cook for an additional 2 minutes.
Combine Ingredients
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, basil, salt, and black pepper. Allow the sauce to thicken for about 3-4 minutes.
Combining Everything
Mix Pasta and Sauce
Add the drained penne pasta to the sauce and toss to coat evenly. If desired, drizzle with pesto sauce for an extra flavor boost.
Serve
Plate the creamy chicken penne, topping with sliced grilled chicken and additional Parmesan cheese if desired. Enjoy your meal!
