    Prepare the Caper Tartar Sauce

    In a bowl, mix together mayonnaise, capers, lemon juice, salt, and black pepper. Adjust seasoning to taste and set aside.

    Prep the Cod

    Pat the cod fillets dry with paper towels, then season both sides with salt and black pepper.

    Breading the Cod

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and the third with crushed potato chips. Dredge each cod fillet in flour, dip into the egg, and then coat with crushed potato chips.

    Fry the Cod

    In a large frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded cod fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    Toast the brioche buns lightly. Spread a generous amount of caper tartar sauce on the bottom bun, place the fried cod on top, and cover with the top bun.
