Method

Prepare Guacamole

    Mash Avocados

    Cut avocados in half, remove pit, and scoop flesh into a bowl. Mash the avocados with a fork.

    Combine Ingredients

    Add roasted corn, lime juice, salt, and chopped cilantro to the mashed avocados. Mix until well combined.

Cook Burger Patties

    Form Patties

    In a bowl, mix ground chuck with salt and black pepper. Form into two equal patties.

    Grill Patties

    Preheat a grill or skillet over medium-high heat. Cook patties for about 4-5 minutes on each side or until desired doneness.

    Melt Cheese

    During the last minute of cooking, place a slice of pepper jack cheese on each patty to melt.

Assemble Burger

    Toast Buns

    Toast brioche buns lightly on the grill or in a toaster.

    Spread Aioli

    Spread a generous layer of chipotle aioli on the bottom half of each bun.

    Layer Ingredients

    Place the cooked burger patty on top of the aioli, followed by a scoop of roasted corn guacamole and a handful of crispy fried jalapenos.

    Finish Burger

    Top with the other half of the brioche bun. Serve immediately.
