Prepare the Brisket
Season the brisket with salt, pepper, smoked paprika, ground cumin, and brown sugar. Rub the seasoning into the meat thoroughly.

Sear the Brisket
In a large skillet, sear the brisket on all sides over medium-high heat until browned, about 3-4 minutes per side. Transfer to a slow cooker.

Add Aromatics
In the same skillet, sauté chopped onion and minced garlic until fragrant. Add to the slow cooker.

Add Broth
Pour beef broth into the slow cooker. Cover and cook on low for 8 hours or until the brisket is tender and easily pulled apart.

Make the Slaw
In a bowl, combine shredded cabbage, grated carrots, mayonnaise, and apple cider vinegar. Mix well and set aside.

Shred the Brisket
Once cooked, remove the brisket from the slow cooker and shred it using two forks. Return the shredded brisket to the sauce in the slow cooker.

Assemble the Sandwiches
Toast brioche buns lightly. Pile on the pulled brisket, drizzle with house BBQ sauce, and top with creamy slaw. Serve immediately.
