Prepare the Braised Brisket
Season the brisket with salt and pepper. Sear in a hot pan until browned on all sides. Add to a slow cooker with onions, garlic, beef broth, and your choice of herbs. Cook on low for 8 hours or until tender.

Prepare Toppings
While the brisket is cooking, prepare the toppings. Chop the lettuce, dice the tomatoes, and slice the jalapenos. Set aside.

Assemble the Nachos
Once the brisket is done, shred it with two forks. On a large baking dish, layer the corn tortilla chips, followed by the shredded brisket, cheese sauce, lettuce, tomatoes, jalapenos, and roasted corn guacamole.

Drizzle BBQ sauce and sour cream over the assembled nachos.
