Directions for Preparation

    Prepare the Carrots

    Preheat the smoker or grill. Peel and cut the carrots into large chunks. Smoke the carrots for about 30 minutes until they are tender and infused with smoky flavor.

    Sauté Aromatics

    In a pan, heat the olive oil over medium heat. Add the cumin seeds and sauté for about 1 minute until fragrant. Then add the garlic cloves and sauté for another 2 minutes.

    Blend Ingredients

    In a blender, combine the smoked carrots, sautéed garlic and cumin, vegetable broth, lemon juice, salt, and black pepper. Blend until smooth and creamy.

    Chill the Gazpacho

    Transfer the blended gazpacho to a bowl and refrigerate for at least 1 hour to chill and allow the flavors to meld.

    Serve

    Serve the gazpacho cold, garnished with fresh parsley.
