    Prepare the Vegetables

    Chop the mixed tomatoes into bite-sized pieces. Slice the grilled bell peppers into strips and set aside.

    Caramelize the Onion

    In a skillet over medium heat, add 1 tablespoon of olive oil. Add thinly sliced onions and cook, stirring occasionally, until they are golden and caramelized, about 15-20 minutes.

    Toast the Bread

    In the same skillet, add another tablespoon of olive oil and toast the slices of French bread until golden brown on both sides. Remove from heat and cut into chunks.

    In a large bowl, combine the chopped tomatoes, grilled bell peppers, caramelized onions, capers, and torn basil leaves.
