Brown the Butter
In a medium saucepan, melt the unsalted butter over medium heat. Continue to cook, stirring frequently, until the butter turns a golden brown color and develops a nutty aroma. Be careful not to let it burn.

Add Sugar and Spices
Sprinkle the brown sugar and cinnamon over the bananas. Stir gently to coat the bananas and allow the sugar to melt and caramelize, about 2-3 minutes.

Flambé with Rum
Remove the pan from heat, carefully add the dark rum, and then return it to the heat. Allow the rum to ignite (if desired) and let the flames subside. Stir in the vanilla extract.

Garnish
Serve the bananas foster immediately, garnished with fresh lemon zest.
