Cooking Instructions
- 1
Prepare the Rub
In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, and dried thyme. Mix well.
- 2
Season the Roast
Rub the prime rib roast with olive oil and then apply the spice rub evenly over the entire surface of the meat.
- 3
Roast the Prime Rib
Preheat your oven to 450°F (232°C). Place the seasoned roast on a rack in a roasting pan and roast for 20 minutes. Then, lower the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness (about 1.5 to 2 hours for medium-rare).
- 4
Rest the Meat
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
- 5
Prepare Au Jus
While the roast is resting, use the drippings in the roasting pan to prepare au jus by adding beef broth and simmering on the stove. Strain if desired.
- 6
Make Horseradish Cream
In a bowl, mix prepared horseradish with sour cream, lemon juice, and salt to taste.
