Prepare the Ground Beef
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, season with salt and black pepper, and cook until browned. Drain excess fat and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add sliced bell peppers and onions, sauté until softened, about 5-7 minutes. Season with salt and pepper to taste.

Warm the Tortillas
Heat the tortillas in a dry skillet over low heat until warm and pliable, about 30 seconds on each side.

Assemble the Tacos
On each tortilla, layer shredded roasted chicken, ground beef, sautéed bell peppers and onions, a scoop of refried beans, a portion of Spanish rice, and top with shredded lettuce, sour cream, and shredded cheddar cheese.

Serve immediately with your favorite salsa or hot sauce on the side.
