    Prepare the Pork

    Season the pork shoulder with salt and pepper. Place it in a slow cooker or smoker.

    Cook the Pork

    Cook on low for 8-10 hours in a slow cooker or 6-8 hours in a smoker until the pork is tender and easily shredded.

    Shred the Pork

    Remove the pork from the cooker and shred it using two forks. Mix in the BBQ sauce.

    In a separate pan, combine the smoked Gouda and cheddar cheese over low heat until melted and smooth.
