Cook the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until lightly golden.

Add Milk and Seasonings

Slowly whisk in the milk, ensuring there are no lumps. Add salt, black pepper, paprika, and garlic powder. Cook until the mixture thickens, about 5-7 minutes.

Incorporate the Cheeses

Remove the pot from heat and stir in the shredded cheddar, Swiss, provolone, mozzarella, smoked Gouda, and crumbled goat cheese until fully melted and well combined.

Combine Pasta and Sauce

Add the cooked macaroni to the cheese sauce, stirring to combine evenly. If desired, transfer to a baking dish.

Add Breadcrumb Topping (optional)

If using breadcrumbs, sprinkle them evenly over the top of the mac and cheese.

Bake (optional)

If you added breadcrumbs, bake in a preheated oven at 350°F (175°C) for 20-25 minutes until golden brown. If not baking, simply serve warm.
