    Prepare the Pork Shoulder

    Preheat your oven to 300°F (150°C). Season the pork shoulder generously with salt and black pepper.

    Cook the Pork

    Place the pork shoulder in a roasting pan and cover it tightly with foil. Roast for about 4-5 hours, or until the internal temperature reaches 195°F (90°C).

    Shred the Pork

    Remove the pork from the oven and let it rest for 30 minutes. Then shred the meat using two forks and mix in the BBQ sauce.

    Grill the Onions

    While the pork is resting, slice the onions into rings. Heat the olive oil in a grill pan over medium heat and add the onions. Grill until they are soft and caramelized, about 10-15 minutes.

    Assemble the Dish

    In a serving dish, layer the shredded BBQ pork, grilled onions, and top with slices of smoked Gouda cheese. Optionally, you can broil it for a few minutes to melt the cheese.
