In a bowl, mix together the jerk seasoning, soy sauce, brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, black pepper, and salt until well combined.

Prepare the Marinade

Rub the marinade generously over the baby back ribs. Cover the ribs with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to let the flavors penetrate.

Preheat your smoker to 225°F (107°C) using your choice of wood chips for smoking, such as hickory or applewood.

Place the marinated ribs in the smoker and smoke for about 4 hours, or until the ribs are tender and have a nice smoky flavor.

Remove the ribs from the smoker and let them rest for 10 minutes before slicing. Serve with your favorite barbecue sauce if desired.

Soak the corn husks in warm water for about 30 minutes to soften them. Drain and set aside.

Prepare Corn Husks

In a large bowl, mix masa harina, baking powder, and salt. In a separate bowl, beat vegetable shortening until fluffy. Gradually add the masa mixture and chicken broth, mixing until a soft dough forms.

Make the Dough

Take a soaked corn husk and spread about 1/4 cup of masa dough onto the center. Add 2 tablespoons of shredded chicken and 1 tablespoon of red chili sauce on top of the masa. Fold the sides of the husk inwards and then fold the bottom up to enclose the filling.

Assemble the Tamales

Place the tamales upright in a steamer pot. Cover with a wet cloth and steam for about 1 to 1.5 hours, or until the masa separates easily from the husk.

Let the tamales cool slightly before serving. Enjoy with extra red chili sauce or your favorite toppings.

In a bowl, combine olive oil, chili powder, ground cumin, garlic powder, salt, and pepper. Add the chicken breasts and coat them evenly with the spice mixture. Let marinate for at least 15 minutes.

Heat a skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes.

Once the chicken is cool enough to handle, shred it using two forks.

Warm the taco shells or tortillas according to package instructions. Fill each shell with shredded chicken, then top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and chopped cilantro.

Serve the tacos immediately, garnished with extra cilantro and lime wedges if desired.

In a bowl, combine olive oil, minced garlic, fresh rosemary, lemon juice, salt, and black pepper. Add the chicken thighs and coat them well. Let marinate for at least 30 minutes.

In the last 5 minutes of cooking, sprinkle the Parmesan cheese over the chicken and vegetables and return to the oven until the cheese is melted and bubbly.
