Method

Preparing the Pork

    Marinate the Pork

    In a large bowl, combine the olive oil, minced garlic, smoked paprika, salt, black pepper, apple cider vinegar, and honey. Mix well to create a marinade.

    Add Pork

    Add the pork shoulder to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover with foil. Roast for about 3-4 hours, or until the meat is tender and easily shreds with a fork.

    Shred the Pork

    Remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks and mix it with the juices in the pan.

Making the Chips

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thick chips (about 1/2 inch wide). Rinse them under cold water to remove excess starch.

    Soak the cut potatoes in cold water for at least 30 minutes to help them become crispy when fried.

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

    Drain the potatoes and pat them dry. Carefully add a batch of chips to the hot oil and fry for 5-7 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt and paprika while hot.

    Serve the shredded pork on a large platter alongside the crispy chips. Garnish with chopped parsley and serve with lemon wedges on the side.
