    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into small cubes, roughly 1 inch in size. Place the cubed potatoes in a pot of cold water, add a pinch of salt, and bring to a boil. Parboil the potatoes for about 5-7 minutes until they are just tender but not fully cooked. Drain and set aside.

    Chop the Vegetables

    While the potatoes are boiling, finely chop the onion and bell pepper. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the chopped onion and bell pepper. Sauté for about 3-5 minutes, until the onions are translucent and the peppers are soft. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
