Slice the Steak
Thinly slice the ribeye steak against the grain into strips. This will help the meat remain tender.

Sauté the Vegetables
In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced bell pepper, onion, and mushrooms. Sauté for about 5-7 minutes until vegetables are tender. Season with salt and black pepper to taste. Remove from skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Add the sliced ribeye steak and cook for 3-5 minutes until browned and cooked to your liking. Season with salt and black pepper.

Melt the Cheese
Place the provolone cheese slices on top of the steak and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese melts.

Prepare the Rolls
While the cheese is melting, slice the hoagie rolls in half lengthwise, but do not cut all the way through.

Assemble the Cheesesteak
Spread mayonnaise on the inside of each hoagie roll. Then, fill each roll with the steak and vegetable mixture. Drizzle hot sauce over the filling as desired.
