    Clean the Mushrooms

    Clean the mushrooms by wiping them with a damp cloth or paper towel to remove dirt. Do not wash them under water as they will absorb moisture.

    Slice the cleaned mushrooms into halves or quarters, depending on their size. Set aside.

Batter Preparation

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well to ensure there are no lumps.

    Gradually add the ice-cold water to the dry mixture while stirring continuously until you achieve a smooth batter. The batter should be thick enough to coat the mushrooms.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can check the temperature with a thermometer or drop a small amount of batter into the oil; it should sizzle immediately.

    Dip each mushroom piece into the batter, ensuring it is fully coated. Carefully drop the battered mushrooms into the hot oil, a few at a time. Avoid overcrowding the pan.

    Fry the mushrooms for about 4-5 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and transfer them to a plate lined with paper towels to drain excess oil.
