    Heat the Milk

    In a large pot, pour the whole milk and slowly heat it over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Vinegar and Rennet

    Once the milk reaches the desired temperature, remove it from heat. Stir in the white vinegar gently. If using rennet, dilute it in a small amount of cool water and add it to the milk mixture. Stir for about 30 seconds.

    Let it Rest

    Cover the pot and let it sit undisturbed for about 5-10 minutes. During this time, the curds will form and separate from the whey.

Curd Formation

    Cut the Curds

    Using a long knife or a spatula, cut the curds into small squares (about 1 inch) to help release the whey.

    Cook the Curds

    Return the pot to low heat and gently stir the curds for about 5-10 minutes, allowing them to firm up. The curds should reach a temperature of around 105°F (40°C).

    Drain the Curds

    Line a colander with cheesecloth and pour the curds and whey into it. Allow the whey to drain for about 5 minutes.

    Season the Curds

    Transfer the drained curds to a mixing bowl. Add salt and any optional flavorings like garlic powder or dried herbs. Mix gently to combine.

    Cool and Store

    Let the curds cool to room temperature, then transfer them to an airtight container. Store in the refrigerator for up to a week.
