Preparing the Catfish

    Prepare the Breading

    In a shallow bowl, combine cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well and set aside.

    In another bowl, whisk together eggs and buttermilk until well combined.

    Dredge the Catfish

    Dip each catfish fillet into the wet mixture, then dredge it in the cornmeal mixture until fully coated. Set aside on a plate.

Frying the Catfish

    In a large skillet, heat 2 cups of vegetable oil over medium-high heat until hot (about 350°F or 175°C).
