    Prep and season beef

    Pat the thinly sliced Wagyu beef dry with paper towels. Season lightly with kosher salt and black pepper to taste, allowing the salt to meld with the beef while you prep the vegetables.

    Sauté onions and mushrooms

    Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add sliced onions and a pinch of salt; sauté for about 5 minutes until they begin to soften and brown. Add mushrooms and cook 4–5 minutes more until browned and their moisture has evaporated. Remove vegetables from the pan and set aside.

    Cook Wagyu beef quickly

    In the same pan, increase heat to high and add the remaining 1 tablespoon oil. Add the sliced Wagyu beef in a thin, even layer and let it sear for 1–2 minutes without stirring to develop color, then stir and cook for another 30–60 seconds until just cooked through. Do not overcook; Wagyu cooks rapidly and remains tender.

    Combine fillings

    Return onions and mushrooms to the pan with the beef. Stir to combine, allowing flavors to meld for about 30 seconds. Reduce heat to low.

    Add cheese

    Top the beef, onions, and mushrooms with the American cheese slices or shredded cheese. Cover the pan for 30–45 seconds to melt the cheese evenly. If using shredded cheese, gently fold it in until melted and glossy.

    Toast rolls

    Warm the hoagie rolls briefly. Optional: butter the insides and toast in a separate skillet or under a broiler until lightly golden.

    Spoon generous amounts of the cheesy Wagyu filling into each roll. If desired, top with sliced hot or sweet peppers. Serve immediately while cheese is melty and the beef is tender.
