Prepare beef and jus base

Season the wagyu beef with salt and 1/2 tsp black pepper. Sear in a hot pan until deeply browned on all sides, then remove and set aside. In the same pan, add chopped onion and crushed garlic; sauté until translucent. Deglaze with red wine (if using) and scrape up fond.

Create au jus

Return beef to pot with onion and garlic. Add beef stock, soy sauce, bay leaf, and fresh thyme. Bring to a simmer and cook gently for 60–75 minutes until beef is tender. Skim foam as needed.

Finish jus

Remove beef, strain the liquid into a clean pot. Simmer to reduce to a sauce with a rich, glossy finish. Adjust seasoning with salt and pepper as needed.

Prepare sandwich assembly

Slice the wagyu beef thinly against the grain. Toast or warm the rolls. Spread each roll with mayo, then layer beef slices and top with Swiss cheese. Place under a broiler or in a hot oven just long enough to melt the cheese.

Serve

Serve the beef and Swiss-topped rolls with a small cup of hot au jus for dipping. Garnish with a light grind of black pepper if desired.
