Preparation

  1. 1

    Prepare the Ingredients

Begin by washing the baby iceberg lettuce and cutting it into quarters. Halve the Campari tomatoes and set aside. Slice the pickled red onion thinly, shave the radish, and create ribbons from the carrot using a vegetable peeler.

  2. 2

    Candy the Bacon

In a skillet over medium heat, cook the Daily's bacon until crispy. Remove from the pan and let cool slightly, then chop into bite-sized pieces. Optionally, toss the bacon in a mixture of brown sugar and a pinch of cayenne pepper to create a candied effect.

Assembly

  1. 3

    Assemble the Wedge

On a serving plate, place a quarter of the baby iceberg lettuce. Top with halved Campari tomatoes, pickled red onion, shaved radish, carrot ribbons, and chopped candied bacon. Crumble Point Reyes blue cheese over the top.

  2. 4

    Dress the Salad

Drizzle smoky blue cheese dressing over the assembled wedge. Serve immediately.
