    Prepare Huckleberry Sauce

    In a saucepan, combine huckleberries, half of the granulated sugar, and a splash of water. Cook over medium heat until the mixture thickens and the berries break down, about 10 minutes. Set aside.

    Brown the Butter

    In a skillet, melt the unsalted butter over medium heat. Continue to cook, stirring frequently, until the butter turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.

    Make the Cake Batter

    In a bowl, whisk together the remaining granulated sugar, brown sugar, flour, baking powder, salt, and cinnamon. In a separate bowl, beat the eggs and add them to the cooled brown butter along with the vanilla extract. Combine the wet and dry ingredients until just mixed. Gently fold in the huckleberries.

    Prepare the Crumble

    In a small bowl, mix oats, flour, brown sugar, and a pinch of salt. Pour melted butter over the mixture and stir until crumbly.

    Assemble and Bake

    Preheat the oven to 350°F (175°C). Spread the huckleberry sauce in the bottom of a greased baking dish. Pour the cake batter on top, and then sprinkle the crumble mixture over the batter. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.

    Serve

    Allow the cobbler to cool for a few minutes before serving. Top each serving with a scoop of vanilla bean ice cream.
