Chicken and Sauce

Summer Succotash

Garlic & Herb New Potatoes

Hericot Verts

Method

Prepare the Chicken and Onion Sauce

  1. 1

    Caramelize the Onions

In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until they are soft and caramelized, about 15-20 minutes. Stir occasionally.

  2. 2

    Cook the Chicken

Season chicken thighs with salt and pepper. Push the onions to the side of the skillet, and add the chicken thighs. Brown them on both sides, about 5 minutes per side.

  3. 3

    Make the Sauce

Add garlic, brown sugar, and soy sauce to the skillet. Stir to combine and let it simmer for about 10 minutes until the chicken is cooked through and the sauce thickens.

Prepare the Summer Succotash

  1. 4

    Cook Vegetables

In a separate pan, combine corn, diced red bell pepper, and zucchini. Sauté for 5-7 minutes until vegetables are tender. Stir in fresh basil and season with salt and pepper to taste.

Prepare the Garlic & Herb New Potatoes

  1. 5

    Cook the Potatoes

Boil new potatoes in salted water until tender, about 15-20 minutes. Drain and toss with minced garlic, olive oil, fresh herbs, salt, and pepper.

Prepare the Hericot Verts

  1. 6

    Sauté the Green Beans

In a skillet, heat olive oil over medium heat. Add hericot verts and sauté for about 5-7 minutes until bright green and tender. Season with salt and pepper.
