Marinate Chicken
In a bowl, combine buttermilk and salt. Add chicken thighs, making sure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Prepare Slaw
In a large bowl, combine shredded cabbage, apple cider vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes.

Bread the Chicken
In a shallow dish, mix flour, cayenne pepper, paprika, garlic powder, onion powder, black pepper, and salt. Remove chicken from the marinade and coat each piece in the flour mixture.

Fry Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry chicken thighs for about 7-8 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain.

Make Nashville Hot Sauce
In a small bowl, mix hot sauce with melted butter (optional) and brush generously over the fried chicken.

Assemble Sandwich
Toast ciabatta rolls. Spread Nashville hot aioli on the bottom half, add fried chicken, top with hydro bibb lettuce, tomato slices, pickles, and apple cider slaw. Close the sandwich with the top half of the ciabatta.
