    Prepare the Marinade

    In a bowl, combine huckleberry verjus, honey vinegar, salt, and black pepper. Whisk well.

    Marinate the Elk Steaks

    Place the cervena elk steaks in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 1 hour.

    Cook the Elk Steaks

    Heat olive oil in a skillet over medium-high heat. Remove the steaks from the marinade and sear them in the skillet for 4-5 minutes on each side for medium-rare. Adjust time based on desired doneness.

    Sauté the Mushrooms

    In the same skillet, add the chanterelle and enoki mushrooms. Sauté for 3-4 minutes until golden and tender.

    Plate the Dish

    Arrange the elk steaks on plates, top with sautéed mushrooms, and garnish with pickled garlic chives and fresh blackberries.
