    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing after each addition until just blended. Do not overmix.

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

    Prepare the Brambleberry Sauce

    In a saucepan, combine brambleberries, sugar, and lemon juice. Cook over medium heat until the berries break down and the sauce thickens, about 10-15 minutes. Remove from heat and let cool.

    Slice the chilled cheesecake and plate it. Drizzle with brambleberry sauce, garnish with fresh mint leaves, and serve with sweet cream on the side.
