Preparing Chicken Strips

Prep the Chicken
Cut the chicken breast into thin strips, approximately 1 inch wide.

Bread the Chicken
Coat each chicken strip in flour, then dip into the egg, and finally coat with breadcrumbs. Ensure each strip is evenly coated.

Heat the Oil
In a large frying pan, heat vegetable oil over medium to high heat until hot.

Fry the Chicken
Carefully place the breaded chicken strips into the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Salad

Prepare the Salad Ingredients
Wash and dry the mixed greens. Halve the cherry tomatoes and slice the cucumber into rounds.

Assemble the Salad
In a large salad bowl, place the mixed greens as a base. Top with sliced cucumbers and cherry tomatoes.

Once the chicken strips have cooled slightly, arrange them on top of the salad.
