Prepare Ahi Tuna

    Season the Tuna

    Pat the Ahi tuna steaks dry with paper towels. Rub olive oil over both sides of each steak, then season generously with salt and black pepper.

    Coat with Sesame Seeds

    Press the sesame seeds onto both sides of the seasoned tuna steaks to create an even coating.

    Sear the Tuna

    Heat a non-stick skillet over medium-high heat. Add a little olive oil to the pan. Once hot, carefully place the tuna steaks in the skillet and sear for 1-2 minutes on each side for rare, or longer if you prefer them cooked more.

    Add Soy Sauce

    In the last minute of cooking, drizzle the soy sauce over the tuna steaks, letting it caramelize slightly before removing the steaks from the heat.

Assemble the Sandwich

    Toast the Buns

    While the tuna is cooking, slice the brioche buns in half and toast them on a skillet or in a toaster until golden brown.

    Prepare the Vegetables

    Slice the avocado and cucumber thinly.

    Spread Sriracha Mayo

    Spread 2 tablespoons of sriracha mayo on the bottom half of each toasted brioche bun.

    Layer the Ingredients

    On each bun, layer some arugula or mixed greens, followed by slices of cucumber and avocado. Top with the seared Ahi tuna steaks.

    Finish the Sandwich

    Spread an additional 2 tablespoons of sriracha mayo on the top half of the bun and place it on top of the assembled sandwich. Press down gently, cut in half if desired, and serve immediately.
