    Prepare the Potatoes

    Peel the Russet potatoes and cut them into cubes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and allow to cool.

    Mix the Dressing

    In a large mixing bowl, combine the mayonnaise, Dijon mustard, pickle relish, salt, black pepper, and paprika. Mix well.

    Combine Ingredients

    Once the potatoes have cooled, add them to the dressing along with the diced celery, red onion, and chopped hard-boiled eggs. Gently fold the ingredients together until well coated.

    Chill and Serve

    Cover the potato salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. Before serving, sprinkle with chopped fresh parsley for garnish.
