Preparing the Potatoes
Wash and peel the potatoes. Cut them into thin strips to create fries.

Soaking the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Frying the Fries
Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Tossing with Truffle Oil
In a large bowl, toss the hot fries with truffle oil, salt, and grated parmesan cheese while they are still hot.

If desired, sprinkle with chopped fresh parsley for added color and flavor.
